Rocky Road Cookies with Almond

Yields 2 dozen cookies
1/2 cup butter, room temperature
3/4 cup white sugar
1 large egg
1 teaspoon vanilla extract
3/4 cup all-purpose flour
1/3 cup cocoa powder
1/4 teaspoon baking soda
Pinch of salt
2/3 cup white chocolate chips
3/4 cup sliced almonds
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, cream together the butter and sugar until light and fluffy, about 2-3 minutes. Add the egg and vanilla and continue beating until well combined.
Slowly add the flour, cocoa powder, baking soda, and salt and beat until well mixed. Stir in the white chocolate chips and almonds.
Spoon onto a baking sheet and flatten slightly with your hand. These cookies will not spread out as much as others simply because they are so full of delicious extras. Bake for 8-10 minutes before moving to a cooling rack to cool completely. Store in an airtight container at room temperature.Rocky Road Cookies with Almonds and White Chocolate Chips
