- 12 sugar cubes
- 4 eggs
- 150g caster sugar
- 150g plain flour
- 100g butter, melted
- 1 teaspoon baking powder
- a pinch of salt
- 125g tinned pineapple slices in juice
Directions

- Put sugar cubes in a small bowl with a bit of water to soak and soften; set aside.
- Preheat oven to 150 C / Gas 2.
- In a large bowl beat eggs with caster sugar. Add flour, melted butter, baking powder and salt and mix well, to a smooth paste; set aside.
- Put soaked sugar cubes in a 23cm round cake tin with high edges. Melt cubes over medium heat and cook, stirring, until caramelised. Rotate tin to coat bottom and sides with caramelised sugar.
- Drain pineapples, but save juice. Arrange pineapple slices in bottom of tin and top with cake mixture.
- Bake in preheated oven for 30 minutes. Let cool for a few minutes before unmoulding. Pour saved pineapple juice all over cake to moisten; cool and serve.
